It's hard to keep track of all the sushi bars lining Ventura Boulevard these days, but Hatsu is a value-oriented neighborhood restaurant with reliable---occasionally excellent---food. In addition to all the usual rolls and more common sushi selections, you'll find a few specials here that make Hatsu worth knowing about. Whenever it's available at the fish market, Hatsu offers delicious live uni (sea urchin), served in its prickly, ominous-looking shell and scooped out with a spoon. Also noteworthy are the live sweet shrimp, displayed in a tank behind the bar. Other house specialties include a big bowl of seared albacore topped with crispy onions, tuna drizzled with mustard sauce, and miso-glazed black cod. Teriyaki, tempura and noodle dishes are also available in the pleasant dining room.
