Velvet in the Hotel Beauchamps is a sister restaurant to Le Bistrot d'Antoine in Nice. The flavors are classic Mediterranean for the most part, but the setting here is very modern. White high-backed booths offer a cozy setting for couples, while groups can cluster at the tall tables topped with colorful art. Start off with foie gras accompanied by fresh figs and lemon confit or a plate of market vegetables topped with tuna and sardines. From the entrées, a particular standout is the Bilbao cod served in a cast iron casserole dish with chorizo, tomatoes and navy beans. The rich, savory broth keeps you going back for more with every spoonful. For dessert, opt for ice cream and sorbets from local artisan Remo or a generous portion of the housemade mille-feuille filled with vanilla and praline cream.
