Credited as one of the founders of Hawaii Regional cuisine, Jean-Marie Josselin, who was born, raised and trained in France, showcases his classical Euro-Asian fare in this strikingly designed restaurant, named after the telephone area code for the state of Hawaii. An Asian-inspired antiqued gate opens into a space distinguished by exotically grained Tami ash woods and internally lit honey onyx. A simulated riverbed of brushed copper pebbles extends to the gleaming exhibition kitchen, which seats ten at its counter. Glass walls laminated with rice paper enclose an eight-seat private room. Prepared by 808 chef Marc Getman, Josselin's menu combines the freshest seafood of the Islands with French, Italian, Chinese, Japanese, Thai and Indian techniques. We like the savory lobster bisque with lemon crème fraîche and lobster morsels and the grilled calamari salad with toasted pumpkin seeds and garlic vinaigrette. The bento box containing six assorted appetizers is a favorite, as are the dim sum sampler---crab wonton, shrimp siu mai and kalua pork pot sticker---and Josselin's seafood and shellfish five-course tasting menus. The delicate sesame-garlic-crusted mahi mahi with lime-ginger beurre blanc comes with stir-fried Asian vegetables; the roasted filet is accompanied by Cabernet-thyme sauce and heirloom potatoes. Save room for the chocolate-macadamia crunch bars with lemon grass ice cream.
