Inspired by the sea itself, chef Stephen Smith churns out seafood dishes like grilled ginger-lime prawns over coconut-jasmine rice or the seafood cioppino with a slightly spicy tomato-fennel base. Land-lovers need not hesitate, as demonstrated by the bacon-bourbon demi-glace filet mignon atop a rich Danish blue cheese and tarragon gratinée or the grilled pork tenderloin topped with a sweet onion and dried cherry glaze.
