While the entrance of A & O (as it’s locally known) is nondescript, the interior is refined --- woven wood walls, moody lighting, and large windows framing views of Seattle. This fourth Ethan Stowell restaurant (Staple & Fancy, Tavolata, How to Cook a Wolf) is dominated by a huge butcher block counter and open kitchen where diners can watch chefs at work. Seafood sourced from near and far rules the menu. For starters, try the escolar (a slender, spiny fish), which hails from warm tropical seas, accompanied by avocado, pickled radish and hot coppa. Or dip a spoon into parsnip soup topped with Dungeness crab, pine nuts and tarragon. Among the pastas, the linguine features a hearty octopus and prosciutto Bolognese, while potato gnocchi is seasoned with sage, and cured tuna heart is paired with a poached egg. Entrées are as intriguing as the starters: Coho salmon topped with chanterelles and sweet pepper; Arctic char with chorizo and tomatoes; and sea scallops with a mushroom ragù, for example. Unfortunately the desserts were disappointing. However, there's an enticing list of interesting Italian wines. Service is casual but attentive.
