Andaluz is classy and stylish, featuring attractive lighting and a fine mural depicting a bullfight. Salted cod comes perched on a tomato and red onion concassé; asparagus, its flavors slightly teased by grilling, blends beautifully with reduced balsamic vinegar and a flick of gray sea salt for tang. Lamb brochette with rémoulade is a served rare and tinged with rosemary. For dessert, consider Catalan chocolate on bread, again touched lightly with gray sea salt.
