We’ve said it before, but Asia-Vous, the tiny jewel box of a restaurant in the North County, keeps getting better and better. Host Kim Bartolome creates a welcoming environment by getting to know patrons as well as educating the staff. A plate-glass wall invites diners into chef Riko Bartolome's realm (yes, this is a husband-wife team) and gives diners a peek into his process. The well-executed, eclectic menu is constantly changing according to Bartolome’s artistic fancy, but his expansive knowledge of food pairing means that rather than lamenting the loss of certain dishes, we rejoice in the opportunity to take new culinary adventures. Not to be missed is the goat cheese tempura with heirloom tomatoes, fennel, mint and honey-balsamic caramel as well as the tangy veal sweetbreads with pineapple, Chinese sausage and broccoli rabe. Even dishes as seemingly traditional as potato soup receive a complex flavor punch (in this case from smoky bacon), making them feel fresh and new. In the entrée category, try the pistachio duck schnitzel with smoked duck crepinette, sweet-and-sour cabbage, and raisin mustard. Our top picks for dessert include the caramelized Maui pineapple with coconut ice cream and currymel sauce as well as the warm carrot bread pudding with black pepper caramel and ginger ice cream. Half the joy in menus like this is that they please the mind as well as the palate.
