| This is the restaurant of a cooking school, and the staff is made up of student chefs who are learning the restaurant business from the ground up. Supervised by professionals, they cook, serve and clean up. Preparations take place in a huge kitchen visible from the dining room and, in fact, the most sought-after tables in the house are just next to the kitchen. This is a favorite lunch spot for interior decorators from the nearby Denver Design Center. For dinner, the place is always packed with locals. The food can be a little uneven: you may find a delicious warm goat cheese and grilled radicchio salad, a bowl of slightly-too-salty onion soup and rosemary-rubbed, properly grilled lamb chops. Ask to be put on the mailing list for announcements of wine dinners and the seven-course, final-exam formal dinners. |
