 The Aviary Restaurant Review: Grant Achatz’s newfangled cocktail lounge is a neutral-hued spot pouring complex cocktails --- in custom-designed vessels, no less --- adjacent to by-ticket dining destination Next Restaurant. Don’t expect to call liquor brands, though, these drinks are painstakingly built from pre-selected spirits. Compose your own “prix-fixe menu” of three cocktails ($45), indulge in a flight of seven cocktails ($85) or choose from à la carte offerings like a riff on the Rob Roy made with Scotch, Pedro Ximenez 1985 and lavender air. The beer list is worth a look-see, too; it houses some unique suds. Try them --- and fancy small bites like Wagyu with smoked paprika, pumpkin seeds and yogurt or potato custard with malt vinegar chips --- while seated at the kitchen table if you can.
