Grant Achatz’s newfangled cocktail lounge is a neutral-hued spot pouring complex cocktails---in custom-designed vessels, no less---adjacent to by-ticket dining destination, Next Restaurant. Don’t expect to call liquor brands, though. Options like ice-encased The Rocks, a riff on an old fashioned, and a seven-layer Hurricane are painstakingly built from pre-selected spirits. The beer list is worth a look-see, too; it houses unique suds like Haandbryggeriet "HaandBic.” Try them---and fancy small bites, like foie gras with rhubarb or potato custard with malt vinegar chips---while seated at the kitchen table if you can.
