Pierre Negrevergne worked for eight years with chef Michel Rostang at one of his restaurants, Le Bistrot d’à Côté Flaubert. That explains his obvious savoir faire in turning out both dishes and pastries. Clad in modern furnishings and colorful paintings, his own bistro has a huge and quiet terrace just off the Mirabeau bridge. The fare is sound and roguish with clear-cut flavors. Made of duck, veal and foie gras from Périgord, the meat pie comes with pickles and fruit chutney. Served in a pot, the calf sweetbread bathes in its own tasty juice along with kidneys, crispy lardons, mushrooms and melting potatoes. Finish with a caramel soufflé and a last sip of one of Negrevergne’s own wines, assembled in partnership with a winemaker.
