THIS ESTABLISHMENT IS NOW A PRIVATE EVENT SPACE On the mezzanine level, and upstairs from Parq restaurant, you will discover Muse, the fine dining room of the Montage Beverly Hills, luxuriously decorated with rich mahogany moldings. In this intimate atmosphere, prepare to enjoy an unhurried evening exploring the cuisine of chef John Cuevas and a wine cellar holding more than 500 selections focused on boutique wineries. Cuevas is lucky to have access to the best, freshest produce, and he likes to keep his cuisine healthy. He focuses on the ingredients, and prepares his dishes in a somewhat straightforward manner that lends them elegance. The turbot, served with charred romaine and apples, comes from Brittany; veal is milk-fed; truffles from Alba flavor potato gnocchi; loup de mer is line-caught, and accompanied by artichoke and roasted peppers; toro from Croatia is served on a brick of quartz. The chef's passion for sweet and savory is best illustrated by his signature 28-day dry-aged coffee-crusted New York strip with Fourme d'Ambert cheese and bourbon-caramel sauce. There are two dégustation menus ($105 and $175) and à la carte options that the very experienced and courteous staff will be happy to explain. Cheeses may complement your meal. Finish with something from the creative pastry team. The dark ganache is made with spiced chocolate and served with sunchoke ice cream, while the peanut semifreddo comes with bacon toffee, milk pudding and brioche croutons. Arrive a few minutes before your reservation to enjoy the private bar overlooking the Montage gardens, where caviar and cocktails are favorites.
