Roast sits right in Borough Market, so it is logical that seasonal ingredients play such a big part in its menus. Many of the components come from small, artisanal producers and it shines through in fresh, strong tastes. The concentration on seasonality even runs through to the drinks. Summer might feature potted Scottish kipper with scones and grain mustard or cured British meats; slow roast pork belly with mashed potatoes and Bramley apple sauce; Dorset plaice with leeks; and Goosnargh chicken breast and wild mushroom and marjoram tart with spinach and native cheese. Roasts to share for two are worth the bother of ordering 24 hours in advance. Hot and cold puddings go down the English crumble route and the cheese board is a real lesson in top native cheeses. The wine list will introduce you to English wines, though you can, of course, go abroad if you wish.
