This traditional noodle house looks straight out of old Kyoto, with its tiny dining room and Japanese knick-knacks. The menu is simple, the star the thick, al dente ramen noodles, a far cry from the fried-and-dried variety to which most Americans are accustomed. Other noodle options include a calorie-free yam noodle and organic whole-wheat. Diners choose their broth, size, level of spice and toppings, which include thin-sliced pork, minced beef, mushrooms, corn, egg or vegetables. The broth is made in-house, simmered for hours, with no additives, and, as at traditional noodle houses in Japan, a filling, steaming bowl of soup can be had for less than $10.
