From the two-toned sea of marble floors at the Omni Hotel, you step onto floral carpets and sink into high-backed upholstered chairs at Azalea. There are fresh flowers and low-lit chandeliers, and a view over the treetops of Independence Square. The food is essentially American, but occasionally there's another influence, such as a ginger vinaigrette and pappadums with ahi tartare, or Chilean sea bass with a lobster Bolognese. A simple salad of mesclun and hearts of palm is napped in persimmon vinaigrette and seared sea scallops are tossed in a light mustard cream sauce and served over angel hair pasta. The wine list might intrigue, but the desserts will keep you there long after you've filled up on entrées. Brunch is a vast repast of everything from carved rack of lamb to fleur de sel cured salmon and eggs Benedict made to order.
