Dining room at Beast, Portland, ORChef Naomi Pomeroy creates a new six-course meal each week and offers that, and only that, at two seatings for four successive nights. Carefully selected wine pairings may (and should) be added. All meals are served in an intimate, attractive dining room with two long, dark wood tables, so expect to engage in conversation with your neighbors. It’s hard to pinpoint the cuisine. Pomeroy has a classical French cooking background that’s colored by her enthusiasm for Oregon’s bounty. A meal might include French onion soup, local duck with pickled sour cherries, fresh ramps and sorrel-goat butter, and end with an array of cheeses and an Armagnac prune frozen mousse. A similarly lavish brunch is offered on Sundays in four courses. The kitchen is open to the dining room, so the air can be smoky, the ambience loud, and the chairs notoriously hard, but the food and adventure are guaranteed to make up for any minor discomforts.
