Chef Jason Dady first unleashed his talent at The Lodge at Castle Hills. But where The Lodge concentrates on fixed menus of multiple courses, Bin 555 takes the opposite tack with a Seville-meets-Sienna selection of small plates---to which has been added a whiff of Asian influence. A plate can be as international as a Vietnamese-influenced grilled shrimp “banh mi” with carrot and daikon slaw or a Korean short rib taco, or as disingenuously down-home as smoked foie gras deviled eggs. Come evening, patrons will want to consult the 55 Wines under $55 list as a prelude to pan-seared Texas quail with parsnip or Spanish-accented patatas bravas. Pizzas from the wood-burning oven are first-rate, and duck confit in a steamed bun has deservedly become a favorite. If available, the cabrales cheesecake with sour cherries is a fitting finale on the leafy patio or in the (sometimes punishingly active) dining rooms.
