Blue Coyote Bar & Grill Restaurant Review: For more than two decades, locals and visitors have sought out the Southwestern specialties found behind the door of Blue Coyote Bar & Grill. The restaurant’s legendary margaritas, including its signature Wild Coyote concoction, may lure in guests, but it’s the authentic and consistent fare that keeps the place a perennial favorite. Zesty flavors and spices are revealed in a number of dishes, including traditional offerings such as the carnitas featuring tender chunks of pork dipped into orange juice and seasoned with spices then deep-fried, to more unusual plates like the “corazones y ajo” featuring artichokes and roasted garlic blended with cheese then baked. There are a few "heart-healthy” dishes and low-carb alternatives, plus popular daily specials. Breakfast burritos, served at lunch, can be paired with Spanish Coffee, a mix of 151 rum, Tia Maria and Kahlúa topped with whipped cream and cinnamon.
