Dining room at Blue Morel Restaurant & Wine Bar, Morristown, NJBlue Morel boasts a sleek look and a modern, ever-changing menu that showcases local farmers, producers and culinary artisans. Heading the kitchen brigade are chef-director Thomas Ciszak and executive chef Kevin Takafuji, a veteran of NYC's Le Bernardin and Cello. Their collaboration has produced starters such as the showy “dragon roll” composed with avocado, cucumber and eel kabayaki. Imaginative salads, such as Arthur & Friends greens, butternut squash, radish, fennel, parsley root and lemon vinaigrette, are memorable. Seafood shines, especially roasted Barnegat scallops served with cauliflower, almonds, orange, grapefruit, brown butter and parsley. The wine list is extensive and expensive but just right for the menu. Sweets are given the same care as savories, and they are loaded with creativity thanks to pastry chef Ernie Rich. His angel food cake with roasted pear and crème fraîche ice cream will make you sigh.
