This Michael Mina-owned steakhouse inside The Westin St. Francis boasts a lofty ceiling, dark columns and dramatic wall mirrors that provide an elegant dining environment. Executive chef Pajo Bruich offers Snake River Farms domestic Wagyu heart of rib-eye as a trio of steak slices: a cut of just the center, tender beef expertly seared to an envelope-thin outer crust while maintaining a medium-rare body throughout, finished optimally with a tiny dusting of salt. His Japanese Wagyu is even better: the product on its own is exceptional, yet Bruich dares to improve on it by dry-aging the meat for 24 days on site, resulting in a sous-vide softness. Steak alone does not a Mina steakhouse make, and Bruich proves his versatility with a variety of dishes rich in presentation and flavor, and contrast of texture and temperature. For example, the limited-production Passmore Ranch sturgeon caviar and Maine lobster is complemented by a creamy béarnaise and warm, pickled apples. Lead sommelier Noah Dranow and his team deliver thoughtful wine pairings and a deep list, with a page of Coravin-accessed, by-the-glass wines from rare and exceptional bottles. Seasonal desserts are standouts, such as the chestnut Bavarian with dense sponge cake, brown butter and Asian pear spheres.
