Carbone's Ristorante Restaurant Review: Looking for authentic Italian cuisine? Head to Carbone's, the family-owned restaurant that’s been cooking Italian for 70-plus years. Tableside presentation is the house specialty, and the pastas and sauce are homemade. Signature dishes include veal cuscinetto, stuffed with prosciutto and sharp cheese; chicken lacava with sausage and hot and sweet peppers; and Atlantic Coast cod saltimbocca, a sautéed prosciutto-wrapped filet. Menu classics range from veal, chicken and eggplant Parmigiana to gnocchi Alfredo and ravioli in pomodoro sauce.
