Chef Jensen Lorenzen takes great care to honor his ingredients as he creates the Cass House’s nightly four-course menus, which are also available with a wine pairing option. A feast for the eyes as well as the palate, the dishes coax layers of flavors with delicate touches like a citrus-tarragon vinaigrette on a snapper ceviche, a black garlic sauce on buttermilk-brined local chicken, or house-made thyme shortbread to accompany foie gras en terrine. The focused menu also offers heavier hitters such as Wagyu beef drizzled with rich bordelaise sauce, house-cured charcuterie (some made with local meats), and the walloping “one bourbon, one scotch, one beer” dessert that happily seems to have become a menu stalwart---in short, it involves a beignet, ice cream and pots du crème. Other desserts are as seasonal as the rest of the menu, often showcasing fresh fruits. The very respectable wine list offers labels from the Central Coast and California wineries, as well as a smattering of international stars such as E. Guigal and M. Chapoutier; instead of wines-by-the-glass, there’s a good selection of half bottles.
