Cerulean Indianapolis Restaurant Review

: Cerulean Indianapolis quickly distinguished itself by presenting exciting, inventive flavors, perhaps with a touch of molecular gastronomy. Chef Caleb France earned his reputation at his Winona Lake restaurant, and he continues to demonstrate his skills at this spot with a huge "bird nest" in the center of the dining room for guests seeking additional privacy. While the rest of the space may seem stark, it offers a great view of the downtown skyline. The often-changing menu proposes two-bite starters, such as a marrow fritter with apple cider glace and crispy sage, or yellowtail tartare, cucumber, red pepper and avocado accompanied by a ginger aïoli. Entrées may be beef short rib with duck fat fried potatoes; smoked scallops with chipotle pasta, arugula pancetta and a saffron cream sauce; or a meatless combo that includes sweet potato, squash, pasta, candied almonds and a lemon-basil sauce. Dessert selections also vary although chocolate truffle and pistachio sponge are quite popular, especially when paired with a ten-year-old port. The menu and knowledgeable servers suggest complementary wines for each course that are right on the mark.
