Take a 1920s-era residence and redesign it, removing fireplaces and knocking out part of a wall to create a viewing aperture. Ring it with a steel rail to create an outdoor dining deck. Within, craft a space that vibrates downstairs with red everywhere: red tufted upholstered banquettes and tiny, square red tiles on support columns and stair risers. Having finished this project, call it, of course, Cherry. Start with a selection from the two-page sushi list---tuna tataki is superior---or, perhaps, some excellent fried calamari. Look for a well-seasoned (if slightly salty) pork chop grilled just to pink, as ordered, with a side of baked mac 'n' white cheddar, spinach and shiitake mushrooms. The wine list is mostly American with the occasional French, Aussie or Argentine selection. There are no dessert wines or anything in the pink department. Some by-the-glass selections are included, although more are needed if this is to become a sipping destination.
