Fine dining in Tallahassee begins with Chez Pierre. Located in a roomy old brick house with a wraparound gallery and dining rooms big and small, the haute cuisine emporium offers French food with a nod to the rustic dishes of Provence. Traditional mainstays such as garlicky escargot and coarse pâté share menu space with jazzy appetizers like fruits de mer cocktail---martini glasses filled with shrimp, crab claws and lobster medallions in an Absolut Citron vinaigrette. The French-Continental cuisine includes a lovely pine nut and sun-dried tomato-crusted rack of New Zealand lamb with mint au jus, and a cedar-planked salmon, but Chez Pierre also serves a great hamburger. Don't skip dessert, even if it means packaging half your entrée for later. The chocolate mousse here practically defines the genre and the flaky Napoleons make traditional bakery versions crumble by comparison.
