Tandoori dishes are cooked in mesquite charcoal-fired clay ovens and arrive with caramelized onion wedges on sizzling platters. But be forewarned, these meats can be on the dry side, so play it safe and order something saucy as well. The lamb curry rogan josh is a savory classic, and even better is jeera chicken sagwala, its tender white meat nuggets submerged in a velvety spinach cream sauce accented with cumin.
