 If slurping margaritas, slamming down the pico with tortilla chips and eating enchiladas and tacos while sitting in front of a bigger-than-life, latter-day Elvis fountain sounds like fun, Chuy’s is your place. Check out the Southwestern-style stacked enchiladas made with blue corn tortillas and topped with a fried egg, and, when they are in season, anything with Hatch chiles. Or try the creamy jalapeño dip and the chicken tortilla soup, loaded with chicken, cheese and avocado. Vegetarians will be pleasantly surprised to see some enticing dishes tailored to their tastes, including veggie enchiladas and a vegetarian combo with a cheese chile relleno. If you’re really hungry, the Elvis Presley Memorial Combo with three kinds of enchiladas, a taco and a side of chili con queso will leave you wishing there was a little more elastic in your jumpsuit.
