Dining room at Cibo Trattoria, Vancouver, canadaLocated near the Orpheum Theatre and just off the Moda Vancouver Hotel lobby, the 52-seat Cibo Trattoria serves rustic Italian-inspired dishes. Executive chef Neil Taylor, formerly of London’s River Café, stays true to the Italian philosophy of fresh ingredients and simple recipes. Cibo, Italian slang for food or festive feast, is housed in a 100-year-old building with towering pieces of local pop art that contrast with the original terra-cotta floors, vast ceilings, and exposed timber beams. The seasonal and farmer-driven menu includes grilled octopus; a salad of chickpeas, heirloom tomatoes, roasted peppers and chilli aïoli; risotto with preserved duck and pine mushrooms; plus a delectable espresso panna cotta with Roman brandy and amaretti. A pre-theatre menu served from 5 p.m. to 7 p.m. features a three-course meal for $39 per person. The wine list includes exotic Italian varietals as well as a selection of “backyard” wines from the Okanagan. The adjacent Uva Wine Bar is a Vancouver standout.
