: To draw up the setting and concept of this Italian restaurant, owner Claudio Puglia clearly found his inspiration in the Ateliers launched by Joël Robuchon. Everything looks similar: subdued lighting, red and black shades, the vast counter that circles an open kitchen, and even the dishes proposed in small portions. However, this initiative allows guests to consider the Italian food differently, thanks to the inventiveness of chef Gabriele Piga. The dégustation menu comprises tiny yet palatable courses. Oyster in a cocktail glass with lemon grass and green apple slices; risotto made with fregola and pecorino cream; and salmon seasoned with kumquat make for an evening of fine dining. Grand Marnier-drenched brioche with hazelnut sherbet and diverse varieties of grated chocolate are subtle desserts to end the meal. Well-stocked cellar with Italian labels.
