The Flamingo's regal fine dining restaurant, named for the hotel empires patriarch, features a serene ambience. A graceful archway separates the wood- and brass-framed state-of-the-art exhibition kitchen, with its copper and stainless steel pots hanging from the ceiling, from the luxurious oak-paneled dining room with its Italian marbled mosaic floors, rich carpeting and soft classical background music. The lobster bisque laced with Cognac, chunks of lobster and vermouth cream is a favorite. Go for the steak tartare with spiced Creole mustard on toasted potato bread. We like the Australian scallops Rockefeller on sautéed spinach and jalapeño bacon with hollandaise. The ginger-marinated seared yellow-fin tuna served with shiitake mushrooms is outstanding, as is the 20-ounce bone-in, center-cut peppercorn New York strip sirloin. Bananas Foster and strawberries served on a silver tree with warm chocolate dipping sauce are worth the splurge.
