 When proprietor and certified wine educator Monsterville Horton IV opened Cova, we were happy to discover that it wasn't just a wine bar. At this sophisticated Rice Village neighborhood hot-spot, epicures converge for wine and food pairing epiphanies. A few of our favorite tapas dishes include seared scallops and prawns with mustard-lime glaze, and seared salmon on a bed of diced shiitake mushrooms and corn, topped with thyme beurre blanc. It's also safe to go completely raw with the ribbons of tuna sashimi drizzled with lemon grass oil. But it's not all about seafood. Small lamb choplets with cauliflower flan also impress, as does oxtail from Horton's guarded family recipe. And every Tuesday is steak night featuring a New York strip atop roasted potatoes. The menu changes with the seasons, just as the wines by the glass are constantly being updated. Expect to enjoy wine flights, special classes, private wine lockers on the premises and camaraderie with like-minded wine lovers.
