Based in Charlotte, North Carolina, The Cowfish Sushi Burger Bar presents a bustling ambience and a clean, crisp modern design. Over the large bar a huge fish tank wall exhibits colorful swimmers and plant life. The menu fuses everything from burgers to sushi, as it rambles from edamame and fried pickles to yellowtail and a cheeseburger roll. "Burgushi" as the company calls its creation brings to the diner sushi rolls using burger components and sandwiches using sushi components. Burgers are quite large half-pounders, so we like the bento box with a mini burger and a side of perhaps cucumber salad and edamame. Some of the burger add-ons are classic (pimento cheese), while others are just plain odd, such as peanut butter or cranberries. For dessert, get the house-made almond cheesecake, a whopper of a wedge on raspberry coulis. Among the good wine choices is a Grüner Veltliner, a grape that does sushi proud, but there's no rosé, which would benefit the menu. Local craft brews abound on draft.
