The look is bare bones; the barbecue is anything but.

Sprawling and spare near the UNM campus, The Cube doesn’t look anything like a down-home barbecue joint. But at its best, it sure tastes like one. Pulled pork and baby-back ribs with meat that slides rather than falls off the bone are its stock in trade. Done Memphis-style --- dry or wet --- both the rub and the sauce are plenty tangy with traditional flavorings like tomato, vinegar and mustard. (Though naked pork is also an option, it’s not a recommended one.) But the extensive menu is sprinkled with many other pleasant surprises, including an array of specialty hot dogs (try the 505 with bacon, green chile and avocado), state-fair-style turkey legs and house-made desserts --- from classic sweet potato pie to seasonal cobblers. What more could you ask for --- besides sweet tea or beer to wash it all down?
