A fine biscuit is not a miracle, but a great deal of art, craft and intuition go into its making. Earl’s Hot Biscuits stands ten minutes from downtown Memphis, right off the expressway in West Memphis, Ark. There’s only one reason to be there: breakfast. Oh, we’ve had some good lunches at Earl’s, but for a glorious surgeon-general-be-damned dining experience, go for a breakfast, served anytime of day: bracingly salty and earthy country ham, smooth and supple grits, eggs of whatever style, hearty red-eye gravy (that’s coffee and ham drippings) and those wonderful, firm-but-fluffy biscuits. Waitresses will call you Honey.
