Eight K Restaurant Review

: To look at the sleek, clubby signature eatery of luxury resort Viceroy Snowmass, you’d think it were located in a metropolis rather than on the side of a mountain. To look at talented chef Will Nolan’s seasonal menus, you might think said metropolis was somewhere down South: think duck gumbo, wings in Louisiana hot sauce or shrimp and grits. But upon closer inspection, you’ll see its Rocky roots and classical European influences, as in rack of Colorado lamb with flageolets, black-trumpet mushrooms and pistou or cast-iron seared local bass over Olathe corn risotto. Desserts like the butterscotch sundae appear geared toward a hard-skiing crowd in search of comfort and sustenance, as do the more straightforward American breakfast and lunch offerings. But that same crowd does love to drink, and a wine list that seems lifted straight from a high-end steakhouse gives them ample opportunity; so does happy hour on the view-blessed terrace.
