Fleming's Prime Steakhouse & Wine Bar Restaurant Review: Founded by restaurateur Paul Fleming --- the original P.F. in P.F. Chang's --- and William Allen III, this steakhouse chain distinguishes itself with top-quality meats and a notable wine program. Expect a wine list featuring numerous hard-to-find American boutique wines as well as renowned national and international labels, with 100 wines by the glass, and an 80-label reserve list. The USDA Prime hand-cut beef includes rib-eyes, filets and New York strips, all seared by intensely high-heat cooking that gives the meat that signature steakhouse outer crust. Then there’s the burger bar where you find among the selections a sliced filet mignon burger with sautéed mushrooms and béarnaise sauce --- no need to pass the ketchup. Broiled Pacific swordfish and a pan-crisped pork belly appetizer, savory and satisfying served over goat cheese grits, are also available. Sides run to Fleming's potatoes with cream, jalapeños and cheddar cheese, and onion rings with smoked jalapeño aïoli. Finish with a familiar dessert: cheesecake, chocolate lava cake or crème brûlée.
