Fleming's Prime Steakhouse & Wine Bar Restaurant Review: Restaurateurs Paul Fleming --- the original P.F. in P.F. Chang's --- and William Allen, III, founded this steakhouse chain, distinguished for its top-quality meats and a large wine program. The white tablecloth ambience, dark woods and low lighting lend Fleming's an upscale vibe, making it ideal for celebratory meals and business dinners. The wine list features popular classic American wines as well as renowned national and international labels, and offers 100 wines by the glass and an 80-label reserve list. The USDA Prime hand-cut beef includes rib-eye steaks, filets and New York strips, all seared by intense high-heat cooking for the signature steakhouse outer crust. Typical steakhouse sides get a gourmet makeover --- think truffled mashed potatoes or Thai-style green beans. A salad could mean a chilled iceberg wedge or a classic Caesar. Seafood is well-thought-out, be it Chilean sea bass or North Atlantic lobster tails. Desserts are familiar: cheesecake, chocolate lava cake and crème brûlée.
