Situated in the former location of Fleur de Lys, Fleur by Hubert Keller is a globally inspired small plates concept that serves up a culinary tour of the world. Natural elements are evident, contributing to a relaxed ambience. Elevated wine racks are visible in the dining room, storing more than 400 international wine varietals. The menu features several plates suitable for sharing, such as the tuna tacos---ahi with serrano, cilantro and avocado cream; and the oysters with margarita sorbet and orange purée, with shells perched atop sea pebbles, kelp and dry ice, resulting in a striking presentation. The stars of the menu are the gnocchi with San Marzano fondue, shaved Parmesan and pesto; and the skirt steak topped with chimichurri sauce with roasted fingerling potato and crème fraîche. Keller pays homage to his appearance on Bravo’s “Top Chef Masters” with his competition-winning “In the Shower” lobster mac ‘n’ cheese, which delivers chunks of lobster in every bite. Finishing touches are the unique cheesecake lollipops, with kumquat gingerbread coating on one side and almond flakes on the other, served with strawberry coulis; and the almond panna cotta, enhanced with a blackberry-kalamansi sorbet and strawberry-citrus soup.
