FLIP burger boutique Restaurant Review: Richard Blais approaches the American two-hander with a classic "Blaisian" sense of humor, given his penchant for operating out of the box. Our favorite may well be the rBQ, which is Blais's riff on Southern barbecue, complete with coleslaw. However, you can still play it safe with the farm burger, made with White Oak Pastures' (Albany, Georgia) grass-fed beef. Rare burger fans might consider the tartare, with a fried egg (we thought overcooked) on top instead of a raw egg. We're not sold on everything, though, and find some of the accoutrements a bit excessive, obscuring the flavor of the very fine meat. For a side dish, blue cheese dressing adorns the tasty sweet potato tots, and fried pickles pair with house-made ranch dressing. The wine list is minimal, and red wines are served too warm.
