Flying V Bar & Grill Restaurant Review: Flying V Bar & Grill’s kitchen is in the able hands of chef Josh Willett. His tacos are filled with luscious lobster; chili rellenos meld potato, Mexican cheese and cilantro; and to complement beef --- a most Southwestern staple --- Willet borrows from France with a bordelaise sauce. Sides include everything from garlic mashed potatoes and asparagus to spaghetti squash and jalapeño broccolini. But when it comes to guacamole, the diner makes all the decisions. Prepped freshly at tableside by a trained “guacomoliere,” the guacamole can be enhance with numerous additions --- go traditional or use your imagination. Overall, expect a seasonal menu using the freshest products around. And while interesting wines are available, it’s the margaritas that play the central role among libations. With tequilas sourced from deep in the heart of Mexico, the mixologists at the “V” pair them with many of the same ingredients found on the dinner menu to create interesting and tasty south-of-the-border concoctions.
