Flying V Bar & Grill Restaurant Review: Modern Southwestern fare is offered at this Loews Ventana Canyon Resort restaurant. From the tangy sea bass ceviche to the grilled rack of lamb with jalapeño mint chimichurri and the white chocolate tres leche cube, the dishes are fine examples of taking the best of the old and making it new again. From the “grill” selections you can enjoy beef tenderloin with tomatillo béarnaise sauce. From the “bar” options, a margarita made with one of over 70 tequilas is a nice touch. And somewhere in between, you must have the guacamole made tableside by the highly trained “guacamoliere,” who will add whatever ingredients you desire. The menu is seasonally influenced, but two regulars are the Flying V burger topped with an Anaheim chile, bacon and Mexican cheese, and the baby-back ribs with your choice of traditional or South Tucson barbecue sauce. Finish your meal off with another shot of tequila.
