Quarterbacks (Dan Marino) and former coaches (Don Shula) are big players in the upscale steakhouse league, but real football fans know that linemen are the true steak experts in the locker room. Fred & Steve's Steakhouse, owned by former NFL nose tackle Fred Smerlas and ex-linebacker Steve DeOssie, overcomes a corny location at the Twin River Casino (the former Lincoln Greyhound Park) and décor that includes football jerseys mounted in marquee cases to offer a classy and most satisfying dining experience. Fred & Steve's scores with its filet and porterhouse cuts. Portions are predictably generous, and couples should plan to share. Starters include the ample Tailgate Salad --- topped with egg slices, juicy beefsteak tomatoes and niçoise olives --- and a smooth sherried lobster bisque, poured over fresh lobster meat in a warm, flat bowl. Classic sides are well executed: the creamed corn is off-the-cob crunchy, while mashed red potatoes are mixed with cheddar, garlic or smothered in onions --- like the recommended Penfolds Shiraz, a good match for the properly prepared steaks. If the slots are taking you too hard, try the Two for $22 special: appetizer, choice of three entrées, plus fresh donuts for dessert.
