So popular is Vietnamese food in Honolulu, that there is a Vietnamese restaurant almost everywhere you turn. Garden of Saigon is the best of these---large, clean, well-run, with excellent food. Order pho with rare beef if you’ve never had that particular Vietnamese meal in a bowl, full of noodles, herbs and vegetables. Also good bets: translucent spring rolls with bright pink shrimp and whole slices of pork, the cold salad of barely cooked beef slices and fresh herbs in lemon dressing and the catfish cooked in red-brown caramelized gravy, powerfully spicy with black pepper. Garden of Saigon makes the best iced Vietnamese coffee with condensed milk. The coffee is the chicory-laced Café du Monde from New Orleans. Accept no substitutes.
