 Gemini Bistro Restaurant Review: There’s something to be said for keeping things simple. Case in point: Lincoln Park’s Gemini Bistro, where chef-about-town Jason Paskewitz (he’s clocked in at SushiSamba Rio, JP Chicago and Wave, among others) works his culinary magic on a mix of French bistro classics and contemporary American dishes. There’s his garbage salad with chilled shrimp, hearts of palm, provolone, tomato, artichoke hearts and salami topped with a red wine vinaigrette, and his short rib ravioli that oozes rich flavor from the slowly cooked meat and pairing of tomato marmalade. The menu is organized by the size of the dishes --- small, medium and large --- making it easy to create the meal of your choice, be it a quick snack at the cozy bar filled with regulars or a family-style meal of whole roasted organic chicken that's enough for two to three people. Look for a thoughtful wine, cocktail and beer list, too. The warm ambience featuring its abundance of dark woods, white marble-topped bar and Chicago-motif artwork makes this the kind of neighborhood spot everybody wishes they had in theirs.
