Before his move to the U.S., Gerard Pangaud earned accolades at his restaurant in Paris. His cuisine is daringly simple yet striking; he has a talent for taking the best ingredients and doing just enough to them to bring out their natural flavors. Many of his dishes, of course, are available only seasonally. Classic bistro fare is now on the menu: terrine of duck with pistachio, foie gras confit, roasted wild salmon with sautéed bok choy, and organic skirt steak with pommes frites. |
