The lofty, breezy space in shades of grey and bright white give the place the feel of a chic seaside resort, where a gin and tonic is certainly in order before plowing into a serving of the first-rate fried chicken livers. Yes, that's right; delicate, crispy chicken livers and other twists on traditional Southern-Texan fare are done with style, wit and a sly nod to the grand silliness of it all. Try the arugula salad served with little spears of asparagus, prosciutto and dusted with shaved aged provolone, a classic combination. Not Your Mama’s Meatloaf is a house favorite topped off with crispy bacon and a sweet tomato glaze. And we love the juicy, fat mint and honey swathed lamp chops served with herbed couscous. End it all with a most decadent dessert: a bright red candied apple filled with custard. Hector’s is one of the few places where the live music at dinner doesn’t overwhelm one’s ability to carry on a conversation.
