Sushi purists probably will hate creations like the ELT, an eel-lettuce-tomato sushi roll with cream cheese or the Higashi West roll, smoked salmon wrapped around a tiger prawn and then baked. Innovation in sushi can go only so far, and the best offerings here may be the most traditional: sparkling fresh fish and shellfish simply prepared. Smaller dishes, called tsumami, include steamed shrimp dumplings with ponzu sauce, a garlic-crusted pork chop with a mixed-mushroom demi-glace and marinated cabbage, a soba noodle salad with hearts of palm and a rice vinaigrette and a salad of baby napa cabbage and grilled chicken breast in a peanut-ginger dressing. The fusion-phobic can try the excellent grilled salmon or teriyaki dishes. A tinkling indoor waterfall and plantings of bamboo set a serene stage.
