Underground isn’t exactly the word for a restaurant like the Hummingbird, an adjunct to a frayed-at-the-edges hotel where rooms are payable in advance and the desk clerk doubles as the cashier for the dining room. Not even greasy spoon does it justice. Still, you’ll occasionally hear a New Orleanian rhapsodize over its pre-dawn breakfasts, BLT or fried-oyster plate. It’s been said that one of the country’s most respected restaurant critics wouldn’t think of leaving the city without a bagful of the Hummingbird’s fried chicken in her carry-on bag. Others are forewarned: This is the underbelly of the city’s restaurant culture.
