Dining room at Ichiban, Milwaukee, WIThis traditional Japanese restaurant offers dishes that range from sea urchin to fried soba noodles, and its sushi bar features an extensive array of maki and nigiri, plus many made-to-order rolls. Other menu highlights include tonkatsu (a thinly sliced, deep-fried pork cutlet), soft-shell crabs and steamed sea bass with house lemon miso or black bean sauce. The shooters are a popular delicacy, with or without saké. Choose from the uni shooter with sea urchin, quail egg and ponzu; the oyster shooter with oysters, quail egg, ponzu and scallions; or the amaebi shooter with sweet shrimp, quail egg and ponzu. As is the case in Japan, high regard is given to presentation. Vegetarians can enjoy 15 or so varieties of sushi made with sweet potato, shiitake mushroom and more.
