INK. OFFERED ITS LAST SERVICE ON JULY 30, 2017. MICHAEL VOLTAGGIO NOW PRESIDES AT INK.WELL ON LA CIENEGA BOULEVARD. Michael Voltaggio may have a fondness for tattoos but the explanation for the name ink. goes beyond that. The restaurant's name is also meant to reflect the "Top Chef" winner's ambition of making his mark on the culinary world. Assisting him in this venture are longtime right-hand man Cole Dickinson and chef de cuisine Brittany Valles. The rather dark, minimalist space encompasses a bar for walk-in diners, private dining room, and the main dining room with a view to the action in the kitchen. (The noise level can be high.) The creative menu features unusual combinations of ingredients and traditional dishes with a twist. Successful examples include the octopus with ink pasta shells, young fennel and pimenton, one of the mainstays on the menu. A touch of molecular gastronomy can be found with the egg yolk "gnocchi." Steaks (California Reserve cuts from Flannery Beef) take a prominent place among the larger plates. Desserts continue the play on flavors and textures, as with the burnt wood semifreddo complementing apples and caramel. Like the cuisine, the wine list and cocktails are also creative. The restaurant employs the environmentally friendly Natura system to filter drinking water. Service is efficient. Voltaggio also operates Sack Sandwiches (formerly ink.sack).
