ink. Restaurant Review

: Michael Voltaggio may have a fondness for tattoos but the explanation for the name ink. goes beyond that. Apparently the restaurant's name is also meant to reflect the "Top Chef" winner's ambition of making his mark on the culinary world. Time will tell what his legacy will be, but in the meantime he has attracted an appreciative crowd of foodies. The rather dark, minimalist space encompasses a bar for walk-in diners, private dining room, and the main dining room with a view to the action in the kitchen. Voltaggio and chef de cuisine Cole Dickinson orchestrate a creative menu featuring unusual combinations of ingredients and traditional dishes with a twist. Successful examples include the octopus with ink pasta shells, young fennel and pimenton. Other creations might range from black snapper with soy-cured melon, fermented chili and basil to pork shoulder with lardo, banana grits and smoked chicharrones. A touch of molecular gastronomy can be found with the egg yolk "gnocchi." Desserts continue the play on flavors and textures, as with the burnt wood semifreddo complementing apples and caramel. All things considered, the prices are reasonable for this level of food. Like the cuisine, the wine list and cocktails are also creative. The restaurant employs the environmentally friendly Natura system to filter drinking water. Service is efficient. Voltaggio also operates ink.sack, the tiny sandwich shop spinoff nearby.
