Jose Garces’ venture delivers seasonal and farm-sourced American dishes in a country store-meets-urban chic setting. The kitchen circles back to the source every time, from the house-made charcuterie to specials such as California abalone with hedgehog mushrooms and even the daily “whole animal,” which might be wood oven-roasted jidori chicken.
