THIS RESTAURANT IS CLOSED Jibarra Modern Mexican & Tequila Lounge Restaurant Review: Devoted to fine Mexican cuisine, Jibarra introduces a new world of exotic flavors to Raleigh. Trained at Akelarre in San Sebastian, Spain, chef Ricardo Quintero uses the ingredients of his native Mexico to create a distinctive menu of elegant dishes: blue crab soup with a crab “cannolini”; striped bass over a tomato pozole stew; snapper in tomato, chile and olive sauce with caper salsa; duck breast with mole spices served with sweet potato purée; and lobster with pico de gallo and chipotle cream. Occasionally Quintero veers into the territory of molecular gastronomy (foie gras foam), but even his most controversial avant garde concoctions please the palate. The wine list offers an impressive collection of fine Spanish and South American selections, and the bar prides itself on its stock of hard-to-find brands of tequila.
